About the Recipe
Even if you are not vegan, you will love these cookies! Yum yum yum absolutely delicious!
1 tsp baking soda
1 tsp salt
160g vegan butter, room temperature
300g sugar / eryrthritol
1 tsp vanilla extract
200g dark choc chips (70%)
Preheat oven to 190 °C
Line 2 baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, salt.
In a large bowl, cream the butter, sugar/erythritol, applesauce, vanilla.
Add wet and dry ingredients together, mix well to form a moist dough.
Stir in the choc chips.
Scoop out rounded tablespoons of dough, use your hand to roll them into balls, and place on the baking sheets, 5cm apart.
Place one baking sheet at a time in middle of oven and bake for 12-15 minutes, until golden
Remove and leave to cool for 10 minutes on tray, and then transfer cookies to a wire rack to cool completely.
